
Fig and Pistachio Salad
I love to make salads that are not only healthy, but delicious and filling too! This salad is savory, salty and filled with nutrition. Enjoy!
What you’ll need:
- 3 handfuls fresh arugula
- 1.5 cups figs – washed and cut in quarters (remove stems)
- 5 TBSP goat cheese crumbled
- 3/4 cup shelled, roasted and chopped pistachios
- 1 handful citrus microgreens
- 1/4 cup balsamic vinegar
- 1 heaping TBSP honey
- Juice of 1 lemon
- 3 TBSP good olive oil
- Salt & pepper to taste
Let’s get cookin’:
- Make dressing: In small bowl mix vinegar, honey, olive oil, lemon juice salt and pepper.
- In a large salad bowl, layer arugula, figs, goat cheese, pistachios and microgreens.
- Gently toss salad with dressing and enjoy!
