Fig and Pistachio Salad

Fig and Pistachio Salad

I love to make salads that are not only healthy, but delicious and filling too! This salad is savory, salty and filled with nutrition. Enjoy!

What you’ll need:

  • 3 handfuls fresh arugula
  • 1.5 cups figs – washed and cut in quarters (remove stems)
  • 5 TBSP goat cheese crumbled
  • 3/4 cup shelled, roasted and chopped pistachios
  • 1 handful citrus microgreens
  • 1/4 cup balsamic vinegar
  • 1 heaping TBSP honey
  • Juice of 1 lemon
  • 3 TBSP good olive oil
  • Salt & pepper to taste

Let’s get cookin’:

  • Make dressing: In small bowl mix vinegar, honey, olive oil, lemon juice salt and pepper.
  • In a large salad bowl, layer arugula, figs, goat cheese, pistachios and microgreens.
  • Gently toss salad with dressing and enjoy!
