
5 Kid-Friendly Fruit Popsicles for Summer!
Hooray! It’s Summer!
Do you want to know my favorite way to cool down, stay hydrated, and get vitamins and anti-oxidants this summer? Home-made fruit ice pops! Yum!
I had so much fun with my girls this weekend making popsicles. Granted, things got a little messy, and some of our combos were, um, interesting, but we got creative and came up with some delicious combos. Probably the hardest part was waiting for them to freeze so we could eat them! 😊
There are so many delicious ways to combine flavors, and the featured photo is from a great blog, but I love to “healthify” ALL of the recipes I learn & create… so here are 5 of my favorites:
Let’s get cookin’! (No heat involved!)
- You will need:
- A high speed blender
- Popsicle molds – I love these ones that collect drips 😉
- Mixing bowls
- Spoons
*(note: all recipes yield about 6 popsicles)
Watermelon-Blackberry-Raspberry Popsicles
- 3 cups watermelon chunks
- ½ cup coconut water
- ½ cup blackberries and raspberries
- First blend the watermelon until smooth – add the berries a pulse a few seconds longer until blended in but not pulverized.
- Spoon into molds.
- Freeze 4-6 hours.
To extract from molds it might be necessary to run warm water over frozen molds to loosen them up.
Strawberry –Lime Popsicles
- 4 cups fresh strawberries (green tops removed)
- 1 Lime – juiced and zested
- ¼ cup raw honey
- Juice and zest the lime. Place all ingredients in blender and blend until smooth. You may need to add a little water.
- Spoon into molds.
- Freeze 4-6 hours.
- To extract from molds it might be necessary to run warm water over frozen molds to loosen them up.
*These are also delicious with a few fresh blueberries added – just drop whole blueberries into the molds with the liquid and swirl around with a spoon before freezing.
Orange- Strawberry Popsicles
- 3 oranges
- 1 cup strawberries – green tops removed
- ½ cup water
- 1 Tablespoon maple syrup
- Juice the oranges – set juice aside.
- Blend strawberries, water and maple syrup.
- First pour the orange juice into the molds. Next add the strawberry mixture – mix together slightly with a spoon – but leave mostly separated (these are so pretty!)
- Freeze 4-6 hours.
- To extract from molds it might be necessary to run warm water over frozen molds to loosen them up.
Pineapple-Coconut Popsicles
- 2 cups chopped fresh pineapple
- 1 cup vanilla coconut milk
- 1 ½ tsp. raw honey
- ¼ cup shredded coconut
- Blend all ingredients in blender.
- Spoon into molds.
- Freeze 4-6 hours.
- To extract from molds it might be necessary to run warm water over frozen molds to loosen them up.
Banana-Mango Popsicles
- 1 ripe banana
- 2 cups frozen mango chunks
- ½ cup coconut water
- Blend all ingredients in blender.
- Spoon into molds.
- Freeze 4-6 hours.
