EASY Gluten Free Bread

Don’t judge me, but I don’t have enough time to make bread from scratch. So, I created this EASY and DELICIOUS recipe for you to make nutritious baked bread at home!

Also, I have to be careful with flours made with nuts because my daughter has a peanut and nut allergy. I found this amazing Gluten, Nut, Soy, Egg, Casein & Sesame Free frozen pizza dough at Whole Foods for $6 – and I use that as my base!

Defrost it overnight in the fridge. Then leave it on your counter for 15 – 30 minutes before you work with the dough to let it soften.

Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

You’ll need:

  • 1 package of dough
  • 1 tbsp each ground flax & chia
  • Handful of kale or spinach chopped
  • 1/4 cup red onion chopped
  • 2 cloves garlic minced
  • 1/4 cup chopped cherry tomatoes
  • Pinch of salt & pepper
  • 1 tsp olive or avocado oil

Get Cookin’:

Mix dough with ground flax & chia until evenly distributed.

Saute the rest of the ingredients (starting with oil, garlic & onion) until cooked. Transfer to mesh colander.

Press cooked mixture into colander (with fist or back of large spoon) to drain excess liquid.

Roll dough into a thin long oval. If its sticking to the paper, put a touch of olive oil on the dough before rolling it out.

Spoon the cooked veggie mixture into the center of the dough in a long line.

Pinch the top and bottom ends of the dough together to enclose the mixture, then roll the tube of dough into a coil.

Place bread on the lined baking sheet. You can brush with beaten egg yolk and cover in sesame seeds, or if you are sesame or egg free, you can brush the bread with a light coat of olive oil.

Bake on the center rack for 15 – 20 minutes or until golden brown…

Serve with soup, salad, or enjoy alone 🙂
