
Lemon Pasta w/ Grilled Chicken, Arugula and Tomatoes
Summer is here! I love grilling in the summer… but sometimes I want a full meal in one bowl, that’s easy to make, delicious and nutritious. This recipe was adapted from Ina Garten’s Barefoot Contessa, the master of food that’s fresh from the Hamptons. You can also replace the grilled chicken with shrimp, scallops, salmon, etc. Enjoy this easy recipe – oh, and it’s gluten free 🙂
