Healthified – Gluten Free – Quiche

My fave gluten free quiche recipe is the “healthified” version of a Bisquick recipe! It’s quick and easy cooking with Bisquick, but not so healthy. So I swapped out Bisquick for Pamela’s, and added a few of my own twists to this recipe! It’s fun to make with kids, and you can put almost ANYTHING into this quiche. You can even make a double or triple batch of the batter and refrigerate for up to a week. Pamela’s contains Almond meal – SO, if you have an nut allergy in your house, please use another GF pancake mix that is nut-free. Enjoy!

What you’ll need:

  • 2 cups unsweetened coconut milk
  • 4 eggs
  • 1 tablespoon Earth’s Balance “butter”
  • 1 cup onion, diced
  • 2 cups asparagus, broccoli, spinach, roasted red peppers, tomatoes, etc.
  • 1/4 cup cooked & chopped chicken sausage, turkey bacon or other lean meat
  • 1 cup cheddar cheese
  • Salt and pepper
  • Avocado, olive, or sunflower oil cooking spray

Directions:

  1. Preheat oven to 350 degrees F. Cook lean protein and chop – set aside to cool.
  2. Place “butter” into a frying pan and place over medium heat. Once butter has melted, add the onion and saute for 2 minutes, stirring often. Add chopped asparagus/spinach/tomatoes/etc. to the pan with the onion and continue sautéing, stirring often (so as not to burn the onion) another 5-6 minutes. Turn off the heat, add a pinch of salt and pepper, stir and cover the pan for about 5 minutes. Remove onions and veggies from the pan and allow the mixture to cool.
  3. In a large mixing bowl, add Pamela’s, coconut milk and eggs and beat together with a whisk until well mixed and smooth consistency.
  4. Spray a quiche or pie pan well with cooking spray. Add half of the veggie/onion mixture, half of the meat and a half cup of the cheese to the bottom of the quiche pan. Pour the entire Pamela’s mixture into the pan. Finally, add the rest of the veggie/onion mixture, the remaining meat and the remaining half cup of cheese. Use a fork to lightly press down the ingredients into the quiche batter. Carefully place quiche in the oven for 25-30 minutes or until lightly browned on top and the center of the quiche looks set. Allow quiche to sit for 20 minutes before slicing.
