EASY Pancakes in ANY Flavor

Who doesn’t LOVE pancakes? We could eat them everyday, but most of the recipes are loaded with fat, sugar and carbs. Kids need protein for heathy brain development, energy & helps them heal and grow. The best time for kids AND adults to load up on protein is in the morning – to prepare us for the day ahead. So when I make these pancakes I also add Love & Peas Protein Powder, ground flax, ground chia, GF organic oats, avocado oil, coconut milk, cinnamon & vanilla. Today’s featured pancake is Lemon Blueberry Vanilla 🙂 See below.

It’s really easy to take a pre-packaged mix, like Pamela’s GF Mix (contains nuts), and follow the instructions on the box/bag. BUT, you replace and add super healthy items.

For example: Pamela’s calls for –

  • 1 cup pancake mix
  • 1 large egg (or egg replacement – I like to use ground flax)
  • 3/4 cup water – REPLACE with unsweetened coconut or almond milk
  • 1 tablespoon oil – USE coconut or avocado oil
  • For my FAVE pancakes ADD:
    • 1/2 scoop protein powder (add more as needed and to taste)
    • 1 tsp ground flax
    • 1 tsp ground chia
    • 1 tsp vanilla extract
  • Lemon Blueberry Vanilla – add:
    • 1 tablespoon lemon juice + some lemon zest
    • a handful of blueberries
    • 1/4 cup organic quick oats
    • extra Vanilla coconut/almond milk as needed
  • But you can also add/replace:
    • Any fruit (washed and chopped if needed)
    • Cinnamon (add apples & oats – YUM)
    • Nuts or Seeds
    • Chocolate chips

If you make a larger batch, or add more oats, protein powder or other dry ingredients, you need to proportionally add wet ingredients. Oh, and you can drizzle honey instead of syrup for added sweetness and nutritional value. Get creative! Have your kids help! You can make these gluten free, dairy free, vegan, BUT always make them FULL of flavor and nutrition.
