Mama’s Oatmeal Chocolate Chip Cookies (Gluten Free & Vegan)

These delicious cookies are made with Vegan chocolate chips, flax “eggs”, Earth’s Balance “butter” and all organic ingredients! Add chopped walnuts for extra Omegas, protein and healthy oils. AND, they’re gluten free – which means you’ll need to make sure the Vanilla is gluten free too. We use Coconut Sugar instead of brown sugar, and Organic Cane Sugar (unrefined) instead of processed sugar. The sugar is cut in half, and we add a small amount of Stevia to keep them sweet! Enjoy 🙂

Ingredients

  • ½ cup Earth’s Balance Organic Butter
  • ¼ cup coconut oil
  • 1 cup coconut sugar
  • ½ cup organic cane sugar
  • 2 eggs OR ½ tsp Xantham gum + 1 tbsp Ground Flax w/ 3 tbsp water (sit for 5 minutes)
  • 2 teaspoons vanilla
  • 2 cups quick oats
  • ½ teaspoon baking soda
  • ½ cup oat flour
  • ¼ cup sorghum flour
  • ¼ cup potato starch
  • 1 cup chocolate chips
  • ¼ teaspoon Stevia
  • 1/2 teaspoon fine salt
  • ½ cup chopped walnuts (optional)

Tools Needed

  • 2 – 3 Baking Sheets
  • Measuring cups & spoons
  • Parchment paper, cooking spray or silicone mat
  • Spatula
  • Wooden spoon

Let’s get cookin’!

Step 1: Preheat oven to 325 degrees. With hand/stand mixer – blend the ‘butter’, coconut oil. coconut sugar, cane sugar, vanilla, and 2 eggs (or Flax “egg” if making these Vegan).

Step 2: In a separate bowl whisk together quick oats, oat & sorghum flour, potato starch, Stevia, baking soda, salt, and Xantham Gum (if replacing eggs).

Step 3: Add wet ingredients to the dry ingredients and mix well. Fold in chocolate chips and walnuts (optional).

Step 4: Scoop mixture with a tablespoon, and place them 2” apart on a lined baking sheet.

Step 5: Bake for 10 – 12 minutes. Let cool for 5 minutes before enjoying!
