Local Pear Salad – Secret Recipe Revealed!

This week I officially launched Mama’s Night Off Food Delivery in 5 neighborhoods in Westchester, NY. Today I delivered Pumpkin & Squash Soup, fresh-baked Rustic Peasant Bread, and a delicious Seasonal Salad filled with roasted pears, spice-glazed walnuts, toasted pumpkin seeds, goat cheese and a nutritious herbed vinaigrette.

Check out THIS soup recipe, and add the flesh from one roasted pumpkin, plus extra coconut milk and spices to make the soup I made today.

As for the Rustic Peasant Bread… I love Mel’s Recipe! Add 2 sprigs of rosemary to the water bath in the oven for a deliciously aromatic treat!

Okay, now about this salad. It is really special. I bought local red pears, cut them in half lengthwise, cored them with a spoon, then rubbed them with cinnamon and a pinch of salt. Placed them flesh down on a lined baking sheet and roasted them in the middle rack of a 350 degree oven for 20 minutes.


You can buy toasted pumpkin seeds, or make your own. Either way, these are a GREAT addition (and snack) for pregnant women, or women looking to become pregnant. Pumpkin seeds are considered one of the healthiest foods on the planet. With a dozen benefits ranging from immune-support, anti-inflammatory, and balancing hormones! They’ll give your soup or salad a delicious crunch!

Other ingredients: 1 cup of rough-chopped walnuts or pecans, sautéed in 2 tablespoons Earth’s Balance “butter”. 1/2 cup organic coconut sugar, 1/2 teaspoon ground cloves, 1/4 teaspoon chili powder & pinch of salt. Layout on a lined banking sheet to cool before crumbling. This is really delicious and adds protein, and a wonderful crunchy element to salad.

You can also buy crumbled goat cheese. I love goat cheese because its creamy, and easier to digest than cows-milk cheese!

Last, but certainly not last… the dressing! Here’s where you get Omega oils, vitamin C, and allergy-fighting enzymes…

  • 1/4 cup avocado oil
  • juice from a whole lemon
  • 5 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon Herbs D’Provence
  • Pinch of salt & pepper

Chop pears, add seeds, nuts and cheese – then toss with organic baby greens and your delicious dressing! VOILA, a delicious & nutritious (and filling) Seasonal Salad.
