CRISPY Sweet Potato Fries

This is a super easy recipe, and a delicious and nutritious snack! But, we really made a mess of this recipe for many many months… before we finally got it right! My kids love french fries. Who doesn’t? And they really love them when they’re fried. But deep frying in our house is a no-no. So, we have to bake them. We tried all different temperatures, baking sheets, oils, etc. but they always came out soggy or burnt!

Finally, I found some sneaky tricks from a website: HealthyCrush.com – use less oil, line the baking pan with parchment paper, oh and coat the fries in egg whites! And voila! Crispy, less oily, evenly cooked, sweet potato fries. You’ll have to make a big batch, because they’re so good they go fast!

Gluten, Nut and Dairy free – Vegetarian

What you’ll need:

2 Large, or 3 medium sweet potatoes (please only buy organic)

1 Tablespoon of olive oil
1 egg white beaten
Pinch of sea salt, black pepper and garlic powder

Baking pan
Potato peeler
Parchment paper
Medium bowl
Fork

Let’s get cookin’:

Step 1: Pre-heat oven to 450 degrees.

Step 2: Wash, peel, and slice potatoes so they are about an inch wide and 4 – 5 inches long. It may take a little extra elbow grease to cut the fries – but if my 3 year old can do it, anyone can 🙂

Step 3: Use fork to beat the egg white in the bowl, then add olive oil, salt, pepper and garlic powder into the bowl.

Step 4: ADULT ONLY: place the empty baking sheet in the 450 degree oven for 5 minutes. Remove and place parchment paper on top.

Step 5: Add sweet potatoes into the bowl and mix well to make sure each potato is coated evenly.

Step 6: Lay out on the parchment paper. BE CAREFUL of the hot pan. Do not let the potatoes touch each other.

Step 7: ADULT ONLY – put baking sheet into oven for 10 minutes. Remove, flip over, and bake another 10 minutes or until crispy.

Step 8: Enjoy!!
