
Chicken Apple Stir Fry
What do you do with leftover Chinese food? Make healthy stir fry! In this recipe we use steamed broccoli and carrots, with a little of the soy/brown sauce, and the brown rice, from our take-out order the night before to create a delicious, in-expensive stir fry. Its only 5 steps – and should take about 15 – 20 minutes total. Oh, and we added a left-over apple from out Fall apple-picking adventures 🙂 – it adds great vitamins and crunch!
What you’ll need:
- 1Â Cup cooked brown rice
- 1Â Apple, skins removed and cubed (small)
- 1 Cup leftover steamed veggies
- 2 Tablespoons brown sauce or soy sauce
- 1 Tablespoon coconut oil
- Organic chicken or turkey sausage (3 links) – OR ground turkey or chicken
- Pinch of salt and pepper
- Large frying pan
- Knives
- Apple peeler
- Measuring cup and spoons
- Wooden spoon
Let’s get cookin’:
Step 1: Peel and cube the apple. Cut the sausage into small cubes. Chop up veggies so they are the same size as the apple and sausage. NOTE: Do not let little hands use the sharp knives!
Step 2:Â ADULT:Â heat the coconut oil frying pan over medium heat and add the sausage. Cook until slightly brown and add apples. Cook both for 3 more minutes.
Step 3:Â ADULT or older child:Â Reduce heat and add in veggies and brown sauce. Simmer for 5 minutes.
Step 4:Â Place rice in a microwave safe bowl and heat in microwave for about 1 – 1.5 minutes.
Step 5: Serve stir fry over the rice and enjoy!
