We LOVE this recipe! Thats why we made it heart-shaped. Within 1 day our 4 person family will gobble up this entire pan of breakfast goodness. Not just at breakfast time, but as a snack or even dessert! It’s fun to make too – with lots of small steps for kids of any age.
Dairy Free & Low Sugar and Sodium
What you’ll need:
1 medium apple, peeled + diced small
3 tablespoons of raisins soaked in water for 10 minutes
1 tablespoon honey
1 teaspoon cinnamon
1 cup whole wheat flour
1 cup unsweetened apple sauce
1 tablespoon coconut oil
1 teaspoon baking powder
1/2 cup ground flax seed
2 tablespoons brown sugar
1 1/2 cups old fashioned oats
1 cup coconut milk
1 teaspoon vanilla
9” inch square pan (or other shapes)
Let’s get cookin’:
Step 1: Preheat oven 350 degrees
Step 2: Put the raisins in a small bowl in water for 10 minutes, then strain well
Step 3: Place diced apples and soaked raisins in a small bowl and toss with cinnamon and honey
Step 4: In a medium sized bowl combine egg*, milk, applesauce, vanilla and coconut oil.
Step 5: In another bowl whisk together flour, brown sugar and baking powder.
Step 6: Gently combine the wet and dry ingredients.
Step 7: Add oats and diced apples with raisins and stir to combine.
Step 8: Pour batter into the prepared baking pan.
Step 9: Spread batter evenly and bake for 30 to 35 minutes or until set.
Step 10: Let cool and cut into slices… YUM!
