WOW Your Valentine – Mama O’Neill Style
The quickest way to someone’s heart is through their stomach. Here are my top 5 favorite recipes for a delicious Valentine’s Day!
#1 – Hand-rolled Orecchiette Pasta
My husband’s favorite Valentine’s Day meal is orecchiette pasta with rabbit ragu. A few years ago we had dinner at iTrulli in NYC. Not only was that dish on the menu, the owner’s Nonna (grandma) was giving pasta rolling classes. I practiced and practiced and finally got it right. The ragu I had to figure out on my own, but the pasta recipe is HERE. I wrote the recipe for kids, and have a “how to” video to make it super easy for you 😉
#2 – Cheesy Spinach Bread
You can’t go wrong with this super easy semi-hand-made bread. It makes a delicious side dish to any meal! Check out the Gluten Free recipe HERE. You can also make it into a heart shape, which makes it even more special for Valentine’s Day!
#3 – Pasta with Clams, Garlic & Arugula
I love making this dish all year round! You can use any pasta, but I recommend organic linguini from Italy… then get 2 dozen fresh clams and scrub and rinse them under cold water. Boil the pasta until al dente and toss with olive oil and fresh baby arugula. To cook the clams, saute garlic and red pepper flakes in 2 tablespoons of olive oil, then toss in the clean clams, a pinch of salt and a 1 cup white wine. Cover and let simmer until the clams are open. Pour on top of the pasta with arugula and enjoy hot!
#4 – Zucchini Wrapped Cod w/ Bacon & Tomatoes
Cast iron cooking is so fun, especially over an open flame, like on the grill or stove top. I created this recipe last summer, and it’s definitely a fan favorite! Check out the recipe and video HERE. Oh, and BTW I have become obsessed with Banner Butter. When you’re making this dish, try the Sea Salt butter! It’s AMAZING!
#5 – Chocolate Dipped Strawberries – so easy, I make the kids make them for me 😉
Who doesn’t like chocolate and strawberries?!? I healthified this recipe for a kids cooking class, and the kids still devoured them before they got home. Whoops. They’re easy and fun to make… and sure to sweeten up your Valentine’s Day. Check out the recipe HERE.
