Spooky Stuffed Peppers
A HALLOWEEN TREAT you and your kids will love! Here’s how I make them…
You’ll need organic orange peppers. Wash them and then cut the tops off like you would a pumpkin… remove seeds with a spoon.
Cut/carve scary faces into the peppers. Try to make the eyes, mouth and nose small enough so that the stuffing does not fall out.
Make the stuffing – I used ground turkey, quinoa, spinach, onion, and Sneaky Mama (TM) Sauce… but you can use any tomato sauce, or seasoning you want.
When the stuffing is ready, you can add cheese to help bind it together… I used parmesan cheese to go with the Italian flavors in the stuffing.
Spoon the stuffing into the peppers. You can either roast them in the oven @ 350 for 7 – 10 minutes, or eat them as is! Enjoy! Happy Halloween!!
